Ingredients
- 4-½ ounce Haloumi Cheese by Papouis
- 1 tablespoon Olive Oil
- 1 teaspoon Lemon Juice, Fresh
- 1 clove Garlic
- 1 tablespoon Basil, Fresh
- 1 teaspoon Oregano, Dried
- ½ medium - 2 1/2" diameter x 2 3/4" Red Bell Peppers, Raw
- ½ medium - 2 1/2" diameter x 2 3/4" Yellow Bell Peppers, Raw
- ¼ medium Zucchini
- ⅛ teaspoon Salt, Sea Salt
- ⅛ teaspoon Black Pepper, Ground
Preparation
- Preheat the oven to 400 degrees Fahrenheit.
- Slice the halloumi into two even slices. Slice the bell pepper pieces in half and the zucchini into two even discs. Arrange across a sheet pan.
- Mince the garlic and add to a small bowl along with the oil, basil, oregano, lemon juice, salt and pepper.
- Drizzle the marinade over the cheese and vegetables and rub all over using your hands.
- Transfer to the oven to bake for 15 minutes until the cheese is golden and the vegetables are tender.
- Arrange two pieces of halloumi on a clean surface and layer each with one of the orange bell pepper slices, followed by the zucchini, remaining halloumi and top with the red bell pepper slices to serve.
